A Simple Asian Glass Noodles Recipe—Wide Glass Noodles With Chili Lime Sauce And Shrimp

Glass noodles, also known as cellophane or bean thread noodles, are a type of transparent noodle made from various starches, most commonly mung bean, cassava (tapioca) or sweet potato starch. All are great for a gluten free diet. The dried wide glass noodles are extremely brittle and hard, requiring a soak in hot water (not boiling water) before used in cooking. Once prepared, they become soft and slippery; with a translucent glass-like appearance. As a result, broad glass noodles are often used in dishes where appearance is just as important as flavor, allowing the paired ingredients to shine. Here is a simple Asian glass noodles recipe that can either be served as a small appetizer or a hearty, family-style main.


Ingredients:

- 1 package of Chinese wide glass noodles

- 6-8 cooked small shrimp

-Soy sauce

-Chili garlic sauce & Chili Lime Sauce

-Sesame oil

-2 garlic cloves

-1 tsp ginger

-Green onions

-Extra chopped cilantro or sliced green onions for garnish


Chili Lime Sauce:

3 tbsp lime juice

2 tbsp soy sauce

2 tbs sesame oil

2 tbsp chopped cilantro

2 tbsp sliced green onions

1 tbsp chili garlic sauce

2 garlic cloves, minced

1 tsp ginger, peeled and minced


Instructions:


1. Boil the wide cellophane noodles for 10 to 12 minutes (no need to soak them first). During this time, you can make the chili lime sauce. 


2. Prepare a large bowl, mix together all of the chili lime sauce ingredients: the lime juice, soy sauce, sesame oil, cilantro, green onions, chili garlic sauce, garlic, ginger.


3. When the clear wide glass noodles are done cooking, drain the pot, give the noodles and a very quick rinse with cold water, then add the cooked small shrimps and wide clear noodles to the large bowl of chili lime sauce. Stir to combine. Garnish with more chopped cilantro or sliced green onion, if desired. Serve immediately.
